Pencai - Storage & Preparation
Pen cai takes centre-stage at the dining table of this feasting season. "8" is the magic number for this dish, which symbolises wealth and abundance. The dish is stacked with eight layers of premium seafood ingredients cooked in 8 different methods.

Storage
Our pen cai comes frozen, you can store in your freezer up to 6 months.
If you intend to consume same day, please thaw it first for 30mins outside then follow instructions below for reheating.
If you intend to consume next day, please store in chiller.
If you intend to consume next few days, please store in freezer and remove pot from freezer to chiller and thaw overnight the night before consumption.
Defrosting Methods
Method 1: Keep the frozen pen cai in the chiller with temperature of 3-5ºC for 24 hours to defrost.
Method 2: Put the frozen pen cai under the clean tap running water for 45 minutes to 1 hour to defrost.
Reheating Instructions
- Open the wrapping plastic and steam cook pencai (without prawn) for 15-20min in 100% defrosted condition.
- Open the prawn wrapping plastic and rinse the prawn with clean tap water.
- After 15-20min, put the prawn into the steaming pot on the last 10 minutes of the cooking duration
- Pen cai is ready to be served!
